Granola is one of those things that gets a bad wrap for being full of sugar and not that great for you. When you make it at home though, you can control the amount of sugar in it and only put in the things you like (so you're not spending half your morning picking out those bits of dried papaya you hate). Win win.
It's a moveable feast - try adding dried mango and coconut for a tropical vibe or some chai spice and almonds for something more exotic. Go nuts. Literally.
Makes about 7 cups of granola.
Ingredients
4 cups whole rolled oats
1 1/2 cups mixed raw nuts
1/2 cup coconut oil, in liquid state
1/3 cup maple syrup
1 tablespoon mixed spice
1 tabs salt (Maldon is without a doubt the best salt going round in my opinion)
1/2 cup medjool dates, chopped
1 cup coconut flakes
Method
Preheat your oven to 150 degrees celsius.
In a large bowl, add the oats, nuts, coconut oil, maple syrup, mixed spice and salt. Mix until everything is coated and moist (couldn't help myself). Pour the mixture onto a large oven tray and spread out so that it's evenly distributed. Put in the oven for 20 mins.
After 20 mins, take the granola out of the oven and add the dates and coconut flakes. Stir until it's all mixed together and put back in the oven for another 20 mins. Your kitchen should smell AMAZING at this point.
After it has been in the oven for 40 mins total, take it out and leave to cool on the tray. It should be nice and golden but not burnt at this point. Once it has cooled, break it up with a spoon and put in an airtight container.
Serve it with yoghurt and berries, sprinkled over a smoothie bowl or on top of a makeshift apple crumble at the end of a hard day.
